I could probably write a book on restaurant kitchens. While living up north going to school, I worked in a Chinese restaurant and the kitchen was in an absolute deplorable state. The word "sanitary" simply did not exist at that time. I would never eat there unless it was something like toast or soup that I was able to prepare myself up front at the counter. The dirty dishes were all thrown into a huge sink out back and washed by hand, and I use the term "washed" lightly.
I worked there for about 2 years and not once in that whole time did I see an inspector come in and do an evaluation on the place. I'm sure if one was done, that would have been it.
The washroom was a whole different story...one washroom shared by both sexes, that says it all.
