hehe, it seems that I know a bit about everything!
I had a FTA receiver in my previous house(lost it when moved), it basically works fine provided you have a good antenna/lnb set!
There are packages for all tastes as in everything... mine was digital.
I used a cheap decoder without any special add in ports, the thing supported DiSEqC so I had a two head lnb, that allowed me to receive two satellites (Astra and HotBird) and in those there are a bunch of what they call transcievers, each transcievers transmit a number of channels. You identify the transcievers by frequency, bit rate and some other stuff.
LyngSat mantains a good list of these.
There are of course a bunch of details, so I advice you to do a good web search and you will find all the information you need!
My main advice is get a good decent decoder/receiver with CAM support! Those will allow you to adapt to any paid provider you may want
